Sweet potato and spinach stew

Recipe for Sweet potato and spinach stew that comes to us from Kenya, Africa, from Roro

Ingredients

  • 1 tbsp Ghee
  • 1 drizzle of almond milk
  • 1 bud of garlic
  • 1 TSP cumin seeds
  • 0.5 TSP salt
  • 0.5 TSP curry powder
  • 1 TSP ginger powder
  • 1 TSP turmeric
  • 2 handfuls baby spinach
  • 3 small sweet potatoes

Cooking Instructions

  1. Boil the sweet potatoes until soft, then, set aside.
  2. Heat the ghee, salt and cumin seeds together
  3. When the cumin seeds start to pop, add the ginger and garlic.
  4. Sautée for 2-3 mins and then, add the spinach and cooked sweet potatoes
  5. Drizzle on the turmeric and curry powder
  6. Cook for 3-4 mins or until the flavours mix
  7. Add a drizzle of almond milk for added richness.
