Recipe for Sweet potato and spinach stew that comes to us from Kenya, Africa, from Roro
Ingredients
- 1 tbsp Ghee
- 1 drizzle of almond milk
- 1 bud of garlic
- 1 TSP cumin seeds
- 0.5 TSP salt
- 0.5 TSP curry powder
- 1 TSP ginger powder
- 1 TSP turmeric
- 2 handfuls baby spinach
- 3 small sweet potatoes
Cooking Instructions
- Boil the sweet potatoes until soft, then, set aside.
- Heat the ghee, salt and cumin seeds together
- When the cumin seeds start to pop, add the ginger and garlic.
- Sautée for 2-3 mins and then, add the spinach and cooked sweet potatoes
- Drizzle on the turmeric and curry powder
- Cook for 3-4 mins or until the flavours mix
- Add a drizzle of almond milk for added richness.
